to doing an outstanding job. I assume the 6 mil plastic is (will be) behind your studs. I would use treated lumber for the base plate. Rather than using unfaced fiberglass insulation, I would recommend using styrofoam or styrene. If the fiberglass ever gets damp, it may harbor mold, etc.
Now for the wall covering, I would go with drywall "greenboard" which is somewhat moisture resistant. If the basement is truly dry, you could get by with regular drywall, but for the small difference in cost, you might as well use the greenboard. You can finish it and paint it a bright color, so the basement doesn't even look like a "basement"
