I think that finding a new top at a sale would be a nice idea and would be the fastest remedy, but finding on that will fit is another story.
The idea of finding some nice oak or birch in 1/16 inch think would be great for gluing to the old top. This would look good and very easy to do. I would not fasten anything to the top as it will show, use a good liquid nails or contact cement.
You can fasten sheet of ply wood to this top and install ceramic tiles if you wish. I have seen this work.
But the new top would be again easier and probably cheaper.
Lay the table top on the sheet of new oak paneling and scribe the outline of the table top onto the paneling. Then with a very sharp jig saw blade maybe one for cutting metal, cut the outline out. Sand the edges round and then glue it to the top after you have cleaned it thorougly.
