wood floor in kitchen

I'm planning to redo the kitchen floor in my new (old-1940s) house. The floor has awful tiles on it (not asbestos though, thank g-d), and it's already raised about 1" above the living and dining room floors. I was contemplating pulling out the old flooring and starting fresh, but I've just discovered that there's old tongue-and-groove wood under two layers of plywood and two layers of vinyl. Do you think I have a fighting chance of restoring the old wood floor, and if so, how would you advise me to proceed?
