Wide Pine Flooring

Any advice out there on installing wide pine flooring (probably 10 in x 1 in). I know all the cons about softness but we want an old look to our 100+ year old farmhouse. We also don't to be freak out when our $7.00/sqft hardwood gets a scratch. My questions relate to refinishing the stuff and how critical is a perfectly level floor to a board this wide. I'm sure we'll have some movement due to our climate and wood heating system. How difficult is it to sand an unfinished pine and make a decent job of staining it. Again, it is an old fashioned look we are going for so is it worth getting a pro into do a "rustic" look or is it something that two able bodied young folk can handle.....providing it doesn;t end the marriage? Just wondering if anyone out there has been through what we are considering doing. Thanks.
