I'd use unfaced fiberglass. You should be applying a continuous [plastic] vapor barrier, so the facing that used to be considered a vapor barrier (discontinuous) has no purpose for you. I can't advise regarding Wet Spray Cellulose, but I can't imagine why anyone would want to bother with anything funky like that when rolls of insulation (although a bit scratchy would go up in under a day for a 1600 foot structure)

If you don't like scratchy you could use comfortherm, but personally, I'd just bite the bullet, wear long sleeves and gloves and go for it.
