what is the process of painting stained chairs

I guess i am just hoping i can do things the quick way, but i am wondering if i have to strip my old maple (stained and varathaned) dining room chairs, or would a good sanding job do the trick. Also what type of paint should i be using. Would they have to be primed and how many coats would i have to do. What about this product i have heard about 'fresh start' by benjamin moore? any help would be greatly appreciated. Thanks, Carol
