What does Henry in MI think?

I am restoring a 100 year old Queen Anne that has beautiful wainscotting, doors and a staircase that is in the process of being stripped. I think I would like to go back with shellac for historical integrity but some of the things i've been hearing indicate polyurathane might be best. I've read some of the things Henry in MI has said and he seems to have some good insight sense but i would be interested in any perspective.
