water: no yellowing, fast drying therefore quicker second and third and fourth coat, no smell, little dust collection due to fast drying, and water clean up. In one day, you can easily apply two coats and the next day apply another two.

Oil: yellowing, smelling, dust collection, one coat dry 24 hours second coat, during dry time collects dust, so have to sand or steel wool, very messy.

My opinion: oil is more durable, but you can really stack the water up for multiple coats and achieve the durability of one coat of oil.
