I think you're talking about Chair Rail molding. You should be able to have the profile replicated by a cabinet or millwork shop. Usually you'd have two options: Settle for "close enough" if they can use standard bits to cut a near-net profile or pay for custom knife fabrication (usually $100 minimum). I'd go for option 1 myself, you won't have enough linear feet to justify the custom run unless you absolutely want to be historically correct.
