Mike, ventilation IS very important here, and it sounds like you may be missing some. The eave vents let air in, but you also need either continuous ridge, or some other venting up near the ridge for air to escape. If the air cannot escape it will cause condensation problems in this kind of weather.

The reason your South side is dry is because the sun warms that surface more thoroughly, and bakes out any moisture.
