vaulting a ceiling

I am purchasing a cottage/cape that has a large, more spacious integrated addition. The main living room and a couple bedrooms reside in the old portion (bedrooms on top), and the bedrooms have dormer windows. The problem is: low ceilings in the bedrooms (about 7' currently). Is it possible to vault the ceilings in the bedrooms, add new support beams or reinforce existing joist (thus fewer beams)? If I were to do this, I would not want a row of 16" spaced beams...that would defeat the purpose. If it is possible, would it be very costly. The rooms are about each about 12x20 in size. I plan to eventually consult an engineer on this, but I'm just trying to get a quick read. Thanks.
