vaulted ceilings

We are alos adding on (two stories), master on second floor. We've already constructed a vaulted with only 7ft walls which places the windows too close to the floor and we've now been informed that the room needs a bearing beam or a set of rafters 1/3 of the way down. We would've preferred higher walls and if we'd known we needed the beams, then we wouldn't have opted for the vaulted. The windows are not yet in and we're discussing whether we should go with one beam or the set (creating a lower ceiling). Any suggestions??
