Uneven walls for Casing/ and baseboards

I am installing new casing over new door jambs. The wall thickness is greater then the thickness of the jamb so the wall sticks out almost the thickness of the drywall from the jamb. So if I try to nail on casing there will be a gap between the casing and jamb. Do I shave the drywall down to be flush with the jamb? Thne install the casing?
