One is caulk
The other is using a compass as a scribe and what your actually doing is to cut out the shelving to the curves and valleys of the wall. This is done many times when installing splash boards to kitchen counter tops on the wall.

Where the shelve is touching, then this has to be removed slightly to allow for a congruent fitting.

This may be too much.
