thinset mortar

Ive been laying tile in a bathroom with an ajoining closet. I have about 20 more tiles to lay in the closet involving some
cuts. Can I switch to a pre mixed thinset so I can lay a few tiles at a time and make my cuts. Have been using dry thinset that gets mixed up in a bucket but switching to pre mix for the rest of the job in the closet so I can stop, cover the thinset and take my time cutting would make life much simpler. Am concerned that the mix it yourself thinset will dry out in the bucket while I am measuring and cutting.
