If you use a setting type joint compound like EasySand by USG or an equal you can spread a coat or two in quick succession and if you lay it down carefully you won't have to do much sanding. A plasterer has the necessary skills and equipment to do the job. It should not take long however there will still be a bit of sanding. Prepare for dust eveywhere.
