I doubt you could chip the brick off without leaving such an uneven surface that you wouldn't want to mess with it.

If it were me, I would probably tear it down to the studs, do any adding of outlets and plumbing, etc. that you wish was there, and redo the wall, starting with a cement backer board like Hardiboard (my favorite) or wonderboard. Tile is not cheap, and you don't want to do this more than once. Do it right the first time...
