Terminolgoy sometimes varies

but I interpret "knock down" as a heavily applied texture with high peaks. Using a trowel that is continously dipped in water, I actually knock down the peaks very easily not to make it smooth but to make plateaus. The water dipped makes the knock down smoother. I do find that thicker compound works better than crows foot thin compound.

Experiment on scraps. Its easy once you get the hang of it.
