More formica!
The edging may be screwed on or fitted into a thin groove; with a bit of luck you might be able to get it off. Then you could pry off the old formica, sand the surface and glue on new formica. You will have to shape the edges flush. That is normally done with a router, but you can do it with a file, if you are careful. Then put the edging back on.
