sub floor flattening

Often times in the wood floor biz I find substrate far from flat. I need to find some type of filler or leveler that can be used beneath nail down installations that will cure quickly and not increase moisture content. Also this filler needs to be able to accept staples and nails without breaking or causing squeeks. Most recently I had to graduate a dish of 5/8" using different thicknesses of plywood and hard board strips afterwards troweling solvent based adhesive over the whole area. Very expensive and time consuming, it just seems like with all the tech out there that I should be able to pour something down that will cure and stay somewhat plyable. What do you think
