stripping paint

We are restoring an old school and have to strip the wainscoting down the wood. I am not have trouble with the scratching you mentioned (a wood chisel works great!). But I do have a concern with the lead paint. Anyone walking into that room has to have a mask on. We only work on one room at a time.

The Peel Off and the Citristrip you mention. Why Peel Off for older paints and vise versa with Citristrip? How many square feet approximately do they cover? We have one heck of a lot of stripping to do on this school. Do you know the manufacturer? I'll try to go straight to them if possible.
