stone masonary restoration

i have an old carriage house, rather large, built in 1886. over the years the mortar has started deteriating
and i am hoping to restore the building and making it into an apartment. its two stories tall with a large loft. i may be undertaking a rather large project. i need instruction as to how's the best way to remortar the structure...i would like to match the original sand stone mortar color. is there a pressure gun or something that a person could use to apply mortar into the crevases...any and all instructions to restoring the natural facing both inside and out would be more than appreciated. the structure is limestone and granite, common to the area in s.e. kansas.
