Spackling dries faster for one

You can generally paint/paper over spackling within 15/30 minutes, whereas you are supposed to allow at least 24 hours for drywall compound to dry.

Also, you can generally fill deeper voids with layers of spackle over a shorter period of time (that drying thing again). However, if you have long cracks, or large holes, using layers of drywall compound with fibre tape will last longer and give you a better end result.
