Sorry, but as far as information on the integrity and longevity of foam as a subfloor in the way you want to do it, you may need to go to the foamboard manufacturers websites for that information. Normally, when foam is used as a floor insulation, it is placed between 2by stringers with a 3/4" subfloor of plywood or osb nailed or screwed down on top. This would be a recommended alternative.

You should read the pergo warranty as to what it covers but I suspect there is an exclusion for water damage.
