LuAnn, this can often lead to more than you might be expecting, as usually the space inside the soffit is open to the attic or area above. It also often has 2 other aspects, which are harder yet to deal with; many times there is wiring passing through that area, and many times your kitchen cabinets rely in part on the soffit for some of thier support. Job built cabinetry usually doesn't have a closure at the top, except for the drywall bootm of the soffit, and your face frame is attached to the soffit framing.

Consider these factors, and check for them in your instance, before moving forward with this idea; it could be more trouble than it's worth.
