soapstone countertops

I am interested in how to know the quality of soapstone if purchased from a dealer/fabricator that mostly sales granite. I am building a new house and love these slabs a dealer has to offer, but it scratches and grinds very easily, shld i be weary? Can some of the stones have too much talc in them and make them less durable? I have two active boys and don't want it loooking ruined in a couple of years. I love the color and effect and don't mind oiling it, but am worried about gouges. Could you possibly let me know right away?? I plan to put it on countertops and the bar and put a granite on the island(maybe the blue bahia) What do you think about that as well(not as important as the other tho)Thank you, Christy Jones
