smothing "sand finished" plaster walls

My house is approx. 40 yrs. old.The walls are a course or "sand finished" plaster.Any ideas or how to's on smoothing these?I was thinking skim coat or sanding but am not a pro at wallfinishes.Bathroom and kitchen have smooth finishes but the rest of the house could take your skin off.Any help would be greatly appreciated.
