The only time poly-urithane yellows is if it's oil based...with brick you want to use latex products because this will allow the bricks to breath... I recommend Benjamin Moores Silicone concrete sealer, it will not make your bricks slippery because the brick is pourus. You want to make sure that it is at least ten degrees and dry for atleast three days before you seal it....
