If your doors are blanks(no holes for lock sets or hinges cut in)Then you could trim either side,BUT look to see which edge is beveled(some are beveled both edges).Cut the edge without the bevel or cut the side that will recieve the hinges.The bevel edge is for the lock side with the high side of the bevel facing out.

A power plane is great for this work,makes a much cleaner cut.Luck
