retaining wall

Perhaps this is something my husband and I shouldn't be trying to do ourselves but we would like to try.

We have a "yard" that slopes down to drainage ditch. I'm thinking that it is about a 25-40 foot "drop". This weekend we cleared it but tried to leave some erosion prevention. We did mulch the vines and "growth" we cleared so there is a nice cover but it will be raining a great deal soon so we what to get this retaining wall started.

First, any ideas to prevent erosion until we can start this?

Also, today I started to read some info. about retaing walls today and it seems that use of wood or timber and even concrete is not recommended. We would like to use railroad timbers simply because of the expensive but we want it to be done correctly.

Is there a certain height where the wall will most definitely begin to lean? We are thinking of building at least 3 terraces to the bottom of the hill.

Anyone know any good step by step guides for retaining walls?
