Replacing our plumbing

I am replacing my plumbing and I am running 3/4" pipe from the city water line. My first stop is the hot water heater which will feed a laundry room in the shed. From there I am forced to run about 30 feet into the house with both cold and hot water. My first main junction will be where I "tee" off to the bathroom and continue on until the kitchen. My question is the following.

1) is there an advantage to running 3/4 pipe from the hot water tank to the junction, and then splitting off to the bath/kitchen with 1/2?

2) pcvc? or something like that, beter than copper?
