Replacing laminate on countertops

My husband and I are doing some remodeling in our kitchen. We've refinished the cabinets, put in a new floor, painted, and now the old countertops look terrible. We're wondering if we can put new laminate over the old. We're thinking we'd like to put wood moulding on the edges instead of laminate. We won't need a backspash because we're going to put ceramic tile on the wall above the counters. Anyone ever put new laminate on over the old? Does it work? What are the issues?
