Replacing Copper Pipe with CPVC or PEX Piping

I face a project of needing to replace my copper piping.

Which is recommended for use by the home owner - CPVC or
PEX piping?

Since the new piping must be brought in through the attic
and inside the walls, what is the recommended method for
cutting holes in the 2 x 4's to allow for the passage
of pipes from the attic?

Any tips, methods or information sources
for this effort will be greatly appreciated.
