Removing mortar from cobblestones

I am trying to clean mortar from pink and black granite cobblestones. Is muratic acid what you would recommend? The mortar has been on them for over 100 years.

If so, what mixture with water, if any? How would you do it? Use a wire brush and a bucket?

Clean up: I have oak trees in the area that I don't want to harm. Can I neutralize the mixture by adding baking soda? If so, how much?

Some of the cobblestones have 1/2'' of mortar on them, similar to what you would find on bricks. Will the acid take that off also? Most of them just have a film of mortar. (I have about 500 to clean.)
