remodeling a room

I have removed a drop ceiling in a room that used to be a garage. I put up new insulation; removed paneling and i'm going to dry wall and possibly stable in interlocking ceiling tiles on furring strips. I have a few problems.......some electrical wires are going through the wall and don't make this a flat service. Could i carve grooves in the underlaying drywall for the wires or what? Can wires run between layers of drywall?
