Remodeled Bath--Need a 3rd Coat of Grout Sealer?

Hi, we've remodeled our bath and you all were kind enough to offer some suggestions for our shower door. Got that fixed, but now have noticed something with the tile grout. I sealed it with two coats of a good sealer, and let set for a week before using the shower. I've now noticed when water hits the grout, some areas will retain their color, as when dry, and other's darken, like there's no sealer there blocking the water. I put two good coats of sealer on, does it sound like I need to put a 3rd coat on, or is there another solution? Have to keep the moisture out, this is below grade and mildew is a battle.
