reclaimed pine?

Henry, I wanted pine in my kitchen, but after hearing various bits of advice, decided to go for it in another room. I'm uncomfortable using first or old growth though, so am considering reclaimed pine. Is there anything, any grade or what have you, that I should ask for when purchasing reclaimed pine for my floors? BTW, I'm wondering your thoughts on watered-down paint in lieu of stain. I've heard it is easier to work with than stain and achieves about the same results. Thanks! Best, aimee
