Recessed Cabinet into Plaster Wall

This is dumb question of the week that I can't find an answer to anywhere on the web. I want to build a recessed cabinet into the bathroom wall which is plaster, not wallboard. So, if I cut the studs (not a load bearing wall), won't I rip apart the plaster on the other side of the wall? Every wall I've ever taken out has had the lath attached to the studs. I figure I'm going to end up with a box attached to the wall, not recessed, but this is really bugging me. And, since DH just painted the room on the other side of the bath, I don't think he'd like it much if I took out the wall by accident.
