Random-width pegged floors

We have random-width pegged floors throughout the first floor of our home. We would like to sand and refinish; however, we do not know what type of polyurethane (or other sealer) to use to allow for expansion and contraction of the joints. The boards currently have a 1/8" - 3/16" gap at the joints; that's why we're concerned with expansion/contraction. Can anyone help?
