I am in the end stages of a remodeling job like you describe. The wall that I took out for the breakfast bar was not a load bearing wall. I did however take out a 10 foot section of a loadbearing wall to open up my staircase. We had to replace the 2x4's with a header. We used two 2x12's and a piece of 3/4 in. plywood sandwiched between them. (the plywood was just to give us the right width on the header.) My husband and a neighbor put it up in about 1 hour. (I had already done all the demolition.) Make sure that you provide a support for the ceiling before you remove the 2x4's or you will be remodeling in a different way. Good Luck
