Poplar Minwax Stain Problems

I'm in need of some guidance. I've recently built my first wood working project - a bed for my son. It's out of poplar, and I thought I could bring it's final finish close to that of a natural maple.

Much to my chagrin, it's come out horribly. I've spent an entire day staining the bed and it looks in some spots as if I let the stain sit for three days (blotchy).

Is there any recourse at this point? I'm willing to paint, but I'd still like to bring it's final color close to maple.
