Polyurathane vs Shellac for refinishing an old maple bedroom set

I'm redoing a solid maple bedroom set from the 1940s. The wood is natural in colour and I've stripped the original finish. I'm almost ready to refinish. I understand that shellac is trickier to apply than polyurathane "varnish". What are the pros and cons of each system? I was planning to spray on shellac as the finish. Any advice from people with experience with both or with refinishing furniture?
