Is it standard practice to use 3/4" in and 1/2" out when installing a water heater? Would 3/4" out yield more or less water pressure?

Can CPVC pipe be used with good long term results in warm FLA climate? Can standard PVC be used on the "in" side to water heater since it will always be cold water coming into the tank?
