Floyd, I know you don't know how, but you have a partially plugged line. The rising water indicates this. It could be toilet paper, wax, dead squirrel in the vent, backup from the neighbors, etc. The gurgling is a sign that the vent is partially plugged. Something crawled down the roof vent or a partial plug from upstairs. Could have poured the hamburger drippings down the drain before you went on vacation and then it solidified later.

You will need to rod out the line. Probably need a plumber. Did you use a new wax ring with a sleeve(funnel)? Those have been known to restrict the flow out of the toilet. Good luck.
