Plaster walls

We live in a 100 year old Vicorian with plaster walls that are in incredible shape. In the upstairs bathroom, the plaster was painted, then later wallpapered. When I pulled off the VINYL (yech!)wallpaper, much of the paint came off with it, leaving spots of paint and spots of bare plaster. I'd like to repaint but I need to remove all of the old paint to avoid all the hill and valley caused by the unpainted areas. How do I get the paint off without ruining the plaster?? Scraping is only helping a little and it's putting dings in the plaster. And I'm afraid that stripper will "eat away" at the plaster ot stain it.
I love the look of painted plaster, it has such a smooth rich look that you can't get with drywall!!
Any suggestions!
