After rereading your post, I'm with jb that 1/4 to 3/8" isn't real bad. Get a hand plane or rent an electric hand planer and shave off as much as the bow as possible. Carpenter's don't hand plane anymore like they used to but you can probably get most of the humps knocked down to size in an hour or two. Find a real straight stud and lay it next to the bowed ones and make a pencil line on the side of the stud to shave.
