Pine planking, random widths...installation and finishing

I have had milled into floor planking huge pine beams from an old factory in Mass. It seems to be like a Ponderosa pine, not too soft, not real hard, but fits my needs regarding a distressed looking floor. I will install it in a 28' x 18' fireplace/country kitchen room with old barn beams in the ceiling. Planks are 11", 9", & 7" wide. I plan to nail them as opposed to sunken screws and plugs...what about finishing? Should I use an oil...like a Danish oil w/stain, or a poly finish? What are the advantages and draw-backs of each?
