Pine Countertop

Ok, I know that I am going against the grain on this, but I am replacing our old countertop with 1 x 8 white pine that I had left over from the floor I just put in. Around the sink, I am going to build up and use tumbled marble about 4-5" away from the wood. What precautions should I take finishing and what would be a good sealer for this application. We went with wood because we didn't see anything that we liked or could afford at this juncture of our remodel, so I am doing this until we decide on what type of material we want. If this turns out good, I won't have to worry about replacing!! And I am for that.
