Paneling removal

My family room was added on years ago and it appears that the paneling was nailed directly to the studs and not over drywall. I'd like to remove the paneling, insulate the walls and then drywall. What kind of issues (and solutions??) can I expect with moving from the thin paneling to thicker drywall. I know door/window casings, electrical boxes....anything else? Are these issues easy enough to deal with?
