Painting/staining oak...

Help, I just bought a house that has too much oak in it. The railings, the cabinets, the doors, the fireplace... I don't mind oak it's just that it is all this very light 'popular in the 80's' honey colored stain...

I would like to stain it or paint it dark if it's not to much of a job to do. Is there anything that I could put on the oak without sanding it? I move with work on a regular basis so I don't want to spend the next year sanding and refinishing... I'd like a lazy shortcut that will make it look less... well... less oaky.

any suggestions would be greatly appreciated. oh, and any suggestions on removal of a sunshine ceiling would also be a big help :)
